Cut and Cover Wine Caves

It took Mother Nature millions of years to create her natural underground caves the old-fashioned way. Natural caves typically offer only one entrance / exit, the dimensions of the cave are pre-determined, and air quality can be poor. (The first blue cheese was created accidentally, due to naturally occurring mold in the caves the cheeses were being aged in!) The biggest drawback is that not everyone has a natural cave available to their estate or winery.

Cut and Cover Wine Caves offers Northern California the most cost effective and environmentally sustainable means of building wine caves for your cask storage and aging needs. Underground Cut and Cover Wine Caves provide ideal conditions for wine storage and wine making, but the realm of possibilities does not end there. They are durable, affordable, multi-use structures located below ground where the earth's temperature remains at a range of 55°F - 60°F, optimal for wine storage. This naturally cool, moist environment drastically reduces the amount of energy normally required to heat and cool above ground facilities used for the production and storage of wine.

Cut and Cover Wine Caves can create a space tailored to whatever needs you see fit. Whether it be a storage cave and/or production facility (from crush to bottling); we can build your cave to include a tasting room, restrooms, commercial or private kitchens, offices, or even a concert hall. We can work with you to provide the cave of your dreams, in a more economically and environmentally sustainable fashion than the currently utilized method of “shooting” a wine cave.

Whether it be for the environment, the world we leave for our children, or the long-term effect on our pocketbooks, being “green and sustainable” is important to us all. Underground Cut and Cover Wine Caves are an ecologically safe, environmentally sustainable, and economically sound investment, allowing you to use less energy and lower your carbon footprint.

History
of Wine Caves

While natural caves have been utilized for cool storage and aging for millennia, the creation of caves exclusively for wine started in California. The first man-made wine caves date back to the mid nineteenth century in Napa Valley. Today, man-made wine caves can be found throughout the state and the Northwest Region of America.
